Were there any states that you thought, ' oh, I'm really, I'm on a fishing expedition here, because I can't find anything'. Or, did every state have something really special about their cuisine? - It was actually the opposite. I found too much in every state during the research process. I ended up coming up with a long list of about ten to twelve options for each of the U.S. States. I did some cursory research on all of those. And again, just the ones that were kind of least to the weirdest most interesting, sometimes most telling, you know, bits of U.S. history were the ones that made the final cut. And than eventually, I narrowed it down to a short list. And than I started talking to people in the states at hand. I conducted, you know, a seemingly endless list of interviews with countless restaurants chefs, folks who work with local historical societies and museums. We're soliciting the opinions of the folks who are intimate with state histories and state foods and just kind of allowing those opinions and those passions to impact my choices also. - I mean the book is so clever and so different from anything I've ever seen before.
